As a mesothelioma survivor, my body has been through numerous surgeries and rounds of chemo. Up to diagnosis, I was a (slow) 5K runner. After beating the odds, and surviving it deadly form of cancer, I made sure to take advantage of every opportunity to celebrate life. Unfortunately, this included eating every piece of cake, scoop of ice cream, etc. that I could get my hands on! ;-)
Now in my mid-40s, and seven years of “no evidence of disease”, I need to get my health back under control in order to plan for the future.
In August 2019 I decided to watch the forks over knives documentary. It inspired me to make some changes to my own diet. I would say that I am currently 85% vegan. I have definite room for improvement, but I also want to be able to enjoy family outings. I figure that even if I’m vegan 85% of the time, it has to be better than the way I used to eat, right?
I have room for inspiration and improvement on this journey!
